4 Recipes for Working Mums

I wanted to share some of the recipes I use to make my kids some quick and healthy meals! Trust me, I fling a pizza in the oven like the rest of us, but I do like my kids to have home cooked meals as often as they can!


Chicken Bake



Chicken Breast

Tin of Tuna

Tin of Chopped Tomatoes

1 Onion

1 Clove of Garlic

Cheese


I take the chicken breast and put it in a baking tray

Chop up the onion and garlic and fry for 10 minutes, till soft

Sprinkle this on top of the chicken

Sprinkle the tuna on top of the chicken

Pour the tin of tomatoes over the mixtures

Grate the cheese over the bake

Bake in the oven at 180 for 30 minutes


Nachos



Doritos

500g Mince

1 onion

1 red pepper

Tin of tomatoes

Cheese


Chop up and fry the onion and pepper for 10 minutes, till soft

Add the mince and fry till brown

Pour over the tin of tomatoes

Place the Doritos in a baking tray

Pour over the mince mixture

Grate the cheese over the mixture

Bake in the oven at 180 for 15 minutes


Chicken Pizza



1 Chicken breast per person

Tomato Puree

Olive oil

Dried Basil

Chorizo

Mushrooms

(whatever toppings you want really)

Cheese


Flatten the chicken breast by hitting it with a rolling pin

Make the sauce by mixing the tomato puree, basil and a teaspoon of olive oil in a bowl

Spread the sauce over the chicken breast

Add your toppings onto the "pizza"

Grate cheese over the top of them

Bake in the oven at 180 for 30 minutes


Mild Curry



Use whatever meat you would prefer, I like chicken, prawn or lamb

Bag of spinach

1 Onion

1 Red Pepper

2 Cloves of garlic

3 teaspoons of Cumin

3 teaspoons of Garam Masala

1 teaspoon of Tumeric

2 teaspoons of Ground Corriander

2 teaspoons of Paprika

Half a tube of Tomato Puree

Tin of Tomatoes


Chop and fry the onion, garlic and pepper in some oil.

Add the meat once the vegetables are starting to soften

Once the meat looks cooked start adding in handfuls of spinach. Let it wilt and keep adding it in until you have put the whole bag in.

Add in the spices and stir around

Squeeze the tomato puree in and add the tin of tomatoes

Serve with rice
